Why Food Sticks, and How to Stop It

Most people who give up on stainless steel do so because everything welds itself to the pan. The cause is specific and the fix is a technique rather than a product.

Why It Sticks

Steel that looks smooth is microscopically rough, with pores and irregularities across the surface.

Cold or moderately warm metal has those pores open. Protein pressed into them bonds chemically to the steel as it cooks, which is what tearing a piece of fish in half feels like.

Heat the metal properly and it expands, closing those pores into a much smoother surface. Add fat and it sits on top rather than soaking in.

The Water Test

  • Heat the dry pan over medium to medium-high heat
  • Flick in a few drops of water
  • Too cold and the drops sizzle and evaporate immediately
  • At the right temperature they form a single ball that skates across the surface
  • Too hot and the ball splits into fragments that vanish instantly

The skating ball is the point where the pan is ready. Cooking guides that lead with this test, of the kind at cooker-king.net, are teaching the thing that actually separates success from a ruined dinner.

Then Add the Fat

Oil goes in after the pan is hot, not before. Cold oil in a cold pan heats slowly and polymerises onto the surface.

Swirl to coat, let it shimmer, then add the food.

Dry the Food

Surface moisture is the other half. Water on a steak has to boil off before browning can begin, and while it does the meat is steaming rather than searing.

Pat everything dry with kitchen paper. It is the least glamorous step and it changes the result more than the pan does.

Then Leave It Alone

Protein sticks initially and releases by itself once a crust has formed. That is not a fault; it is the process.

Moving it too early tears it. Waiting until it lifts freely is what produces a clean release, and it takes longer than most people are comfortable with.

Do Not Crowd the Pan

Too much food at once drops the temperature and releases enough moisture to steam everything.

Cook in batches with space around each piece.

The Fond Is the Point

The browned residue left behind is flavour. A splash of liquid and a wooden spoon turns it into a sauce and cleans the pan at once.

Practise on Something Cheap

Not on the fish you bought for guests.
